There are three distinct processes: washed, natural, and honey.
In the honey process, coffee cherries are pulped to remove most of outer fruit, but not all. A layer of sticky mucilage is left on the beans to enhance sweetness. As they dry in the sun, the sugars from the mucilage infuse the beans with a rich, smooth flavor. This method creates a balanced cup with natural sweetness and a velvety body. It’s the perfect middle ground between the clean washed process and the bold natural process.
